Abstract

Phosphorus, a vital mineral for human cellular function primarily found in bones and teeth, is present in wheat, a dietary staple. Profiling wheat phosphorus reveals its prevalence as phytate, with phytase aiding phosphate liberation. Common wheat has higher phosphorus than ancient varieties. Phosphorus contributes to energy production, acid-base balance, and bone health. Deficiency (hypophosphatemia) is rare and linked to medical conditions, while excess (hyperphosphatemia) is rare in those with normal kidney function. Some studies suggest associations between high phosphorus intake and health issues, but findings are inconclusive. The article stresses the importance of considering individual health conditions in understanding phosphorus effects
